Twice Baked Sweet Potatoes
Ingredients
3 Sweet Potatoes
8 slices bacon, cooked and crumbled
2 tbsp sour cream
3 to 4 green onions, chopped
Salt and pepper to taste
1 ½ tsp Paprika
¾ cup shredded cheese: Gruyere, cheddar, gouda or mozzarella
Instructions
Clean and dry the potatoes
Preheat the oven to 375*
Spritz the outside of each potato with olive oil and sprinkle with salt
Bake for 45 to 60 minutes, until the potatoes are soft
When done, cool just slightly, when you can hold the potato slice them in half lengthwise
Scoop the meaty part of the potato into a bowl.
Mash the potato until smooth
Add in the toppings and seasoning along with the sour cream and blend together completely
Spoon the filling back into each half potato
Sprinkle the remaining cheese onto the tops of each potato
Bake for another 5 minutes or until the cheese is melted
Garnish with bacon bits and parsley
