Sausage, Peppers & Potatoes Bake
Ingredients
1 ½ lbs Italian sausage links (mild, sweet, or spicy — your choice)
1 ½ lbs potatoes, cut into wedges or thick slices
1 large onion, sliced
2–3 bell peppers (red, yellow, or a mix), sliced
4 cloves garlic, smashed or sliced
3 tablespoons olive oil
1 teaspoon garlic herb seasoning blend (Italian seasoning works too)
½ teaspoon crushed red pepper flakes (optional, for heat)
Salt & freshly ground black pepper, to taste
Instructions
Preheat oven
Heat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
Layer sausage and vegetables
Place sausage links on the bottom of the dish.
Top with potatoes, onion slices, peppers, and garlic.
Season and toss
Drizzle olive oil over everything.
Sprinkle with garlic herb seasoning, red pepper flakes, salt, and black pepper.
Toss the vegetables gently, keeping sausages on the bottom.
Bake
Bake uncovered for 40 minutes, flipping sausages halfway through to brown evenly.
Cut & finish
With 5 minutes remaining, cut sausages into bite-sized pieces.
Stir everything together and return to oven for the final few minutes, letting the flavors meld.
Serve
Remove from oven and serve hot. Pairs perfectly with a crisp green salad or crusty bread.
