Tortilla Chip Enchiladas

Ingredients

1 lb ground beef (or swap with shredded chicken or ground turkey)

1 package tortilla chips (approximately 12 oz)

3 cups grated cheese (any good melting blend)

1 can (28 oz) red enchilada sauce

1 can (4 oz) chopped green chilies, drained well

1 teaspoon cumin powder

½ cup prepared salsa

Instructions

Preheat your oven to 350°F (175°C).

In a skillet over medium heat, cook the ground beef until fully browned. Drain off any excess fat.

Stir in the diced green chilies, salsa, and ground cumin. Mix well until everything is evenly combined.

Place the tortilla chips in a large mixing bowl and lightly crush them into smaller pieces (do not over-break).

Add the seasoned beef mixture on top of the chips.

Pour in the enchilada sauce, then add 1 cup of shredded cheese. Gently toss everything together until well coated.

Lightly grease a baking dish with non-stick spray.

Transfer the tortilla chip mixture into the prepared baking dish, spreading it out evenly.

Sprinkle the remaining 2 cups of shredded cheese over the top, making sure the surface is fully covered.

Cover the dish tightly with foil.

Bake for 50 minutes, until hot and bubbly.
