Thai Red Curry Shrimp Noodle Soup
Ingredients:
1 tablespoon olive oil
1/2 lb-1lb shrimp
Kosher salt and freshly ground black pepper, to taste
3 -s4 cloves garlic, minced
1 red bell pepper, diced
1 onion, diced
Sliced mushrooms , I used 6-7 whole baby Bella
1/4 of zucchini
2-3 baby bok choy
3 tablespoons red curry paste
1 tablespoon freshly grated ginger
6 cups low sodium chicken broth
1 (13.5-ounce) can coconut milk
Rice noodles or any type you would like like
1 tablespoon fish sauce
2 teaspoons brown sugar
3 green onions, thinly sliced
chopped fresh cilantro leaves
chopped fresh basil leaves
freshly squeezed lime juice
Instructions:
Heat the oil in a Dutch oven , add the peppers , onions, sauté a little .
Add the ginger garlic and red curry paste cook about 1minute .
Add broth, coconut milk l, the mushrooms and zucchini .
Bring to a boil l, once boiling turn the heat down and simmer for about 7 min .
At this point add the fish sauce and the brown sugar , salt and pepper if needed .
Add the shrimp and bok Choy, cook another 2 -3 minutes , turn off the heat add the cilantro ,and basil
I cook my noodles separate , I just plate them and pour the hot broth over them !
Top the soup with the green onion, red onion , more cilantro , some lime juice and black sesame seeds!
