Ingredients
10–12 fresh jalapeño peppers, cut into thin rounds
2 garlic cloves, lightly crushed
1 cup distilled white vinegar
1 cup water
2 tablespoons granulated sugar
1 tablespoon salt
1 teaspoon whole black peppercorns
1 teaspoon mustard seeds
1/2 teaspoon red pepper flakes (optional, for extra spice)
1/2 teaspoon ground turmeric (optional, for color)
Instructions
Fill the jars
Arrange the sliced jalapeños and smashed garlic evenly into clean, sterilized jars.
Prepare the brine
In a small saucepan, mix together the vinegar, water, sugar, salt, and all spices. Heat gently, stirring, until everything is fully dissolved and the mixture begins to lightly simmer.
Add the brine
Carefully pour the hot liquid over the jalapeños, making sure they are completely submerged.
Cool and seal
Allow the jars to cool down to room temperature, then close them tightly with lids.
Chill for best flavor
Place the jars in the refrigerator and let them sit for at least 24 hours to develop their full, bold flavor.
