Key Ingredients

Pie Crusts:

Cooked Chicken:
Cooked chicken gives the pot pie its hearty foundation. Using a whole cooked chicken adds a mix of tender white and dark meat for better flavor.

Hatch Green Chile:
Hatch green chile is the signature ingredient. It brings smoky, roasted flavor, mild heat, and a deep New Mexico-style richness.

Half-and-Half, Heavy Cream, or Whole Milk:
This adds creaminess to the filling. Heavy cream makes it richer, while whole milk keeps it lighter.

Chicken Broth:
Chicken broth gives the sauce savory depth and helps create the classic pot pie filling texture.

Butter:
Butter adds richness and helps cook the vegetables while forming the roux with flour.

Flour:
Flour thickens the filling and helps create a creamy sauce that holds together inside the pie.

Celery, Carrots, Onion, and Peas:
These vegetables bring color, sweetness, texture, and classic pot pie comfort.

White Wine:
Chardonnay adds brightness and depth to the creamy sauce, balancing the richness of the butter and cream.

Parsley and Thyme:
These herbs give the filling a warm, earthy, homemade flavor.

Egg Wash:
The beaten egg creates a glossy, golden crust on top of the pies.

Important Notes When Making Green Chili Chicken Pot Pie

The chicken should be fully cooked before adding it to the filling.

Hatch green chile can be mild, medium, or hot, so choose based on your spice preference.

If the filling seems too thin, simmer it a little longer before assembling.

If the filling becomes too thick, add a splash of chicken broth or milk.

The pie crust should be sealed well around the edges.

Venting the top crust helps prevent the filling from overflowing.

Baking time may vary depending on the depth of the pie dishes.

The crust should be golden and the filling should be hot and bubbling.

Letting the pie rest for 5 to 10 minutes makes slicing easier.

Leftovers should be covered and refrigerated.

How to Enjoy This Green Chili Chicken Pot Pie After Cooking

After the Green Chili Chicken Pot Pie comes out of the oven, let it rest for at least 5 to 10 minutes before slicing. This helps the creamy filling settle and prevents it from spilling out too quickly when cut.

Slice the pie into generous wedges and serve warm. Each piece should have flaky crust, tender chicken, sweet vegetables, creamy sauce, and smoky green chile in every bite.

This pot pie is hearty enough to enjoy on its own, but it also pairs beautifully with a crisp green salad, roasted vegetables, pinto beans, black beans, Mexican rice, or a simple cucumber tomato salad.

For extra Southwestern flavor, serve each slice with salsa verde, sour cream, chopped cilantro, sliced avocado, or extra roasted Hatch green chile on the side.

This dish is especially comforting for family dinners, cold evenings, Sunday meals, or holiday-style comfort food. The second pie can be shared, saved for leftovers, or wrapped and frozen for another meal.

Leftovers can be reheated in the oven until the crust is warm and crisp again. Reheating in the microwave works too, but the crust will be softer.
