Alabama Chew Bread

Ingredients

1 cup granulated sugar

1 cup packed brown sugar

3/4 cup butter, melted

1/4 cup vegetable oil

4 large eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups self-rising flour

1/2 teaspoon ground cinnamon, optional

2 cups chopped pecans

Instructions

Preheat the oven to 350°F / 175°C. Grease a 9×13-inch baking dish well and set it aside.

In a large mixing bowl, add the granulated sugar, brown sugar, melted butter, and vegetable oil. Stir until the mixture is smooth and fully combined.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until evenly blended.

Add the self-rising flour, cinnamon if using, and chopped pecans. Mix gently until everything is just combined. Do not overmix the batter.

Pour the batter into the prepared baking dish and spread it out evenly.

Bake for 28 to 32 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Remove from the oven and let the chew bread cool for about 20 minutes before slicing.

Cut into squares or bars and serve.
