Fideo de Camaron Recipe

Ingredients:

14.5 ounce candiced tomatoes with green chili an onion and tomato sauce

1 medium onion, chopped

1 teaspoon minced garlic

1/2 teaspoon cumin powder

6 cups chicken broth.. or the caldo de pollo bouillon cubes. With water

2 or 3 tablespoons olive oil, divided. Teaspoon of butter 8 ounces fideo pasta

Crushed chili flakes

Cilantro

Lime or lemon

jalapeño

Uncooked shrimp without the head and tail..

Instructions:

Step 1:

In a pan add olive oil, butter, chili flake, onion and garlic sauté then add shrimp and cook till pink… squeeze a little lemon or lime in the shrimp.

Step 2:

Add the fideo to the shrimp…Toast the fideo. , the noodles in sopa de fideo are toasted until they they are slightly browned and blistered.

Step 3:

Make the broth.

Add can of diced tomatoes, tomato sauce, cumin and chicken broth or caldo de pollo.

Use water if using the caldo de pollo.

A lil chopped cilantro…

Add the broth mix just a little and cook for 20 minutes or till tender on medium low..

I like to garnish with fresh tomato, cilantro.. lemon or lime.

Step 4:

Instead of shrimp you can use chicken, pork or beef.. of course of you use beef then you’d wanna use caldo de res.

Step 5:

Don’t use salt because the broth has plenty.
