Chinese Pepper Steak with Onion

Ingredients

Beef sirloin – 1 pound, thinly sliced across the grain for tenderness

Soy sauce – 2 tablespoons, for savory seasoning and marinade

Cornstarch – 1 tablespoon, to help tenderize the beef and thicken the sauce

Vegetable oil – 2 tablespoons, divided, for stir-frying meat and vegetables

Onion – 1 large, thinly sliced, adds natural sweetness and depth

Green bell pepper – 1, sliced into strips for crunch and freshness

Red bell pepper – 1, sliced into strips for color and a touch of sweetness

Garlic – 2 cloves, minced, for aromatic flavor

Oyster sauce – 1 tablespoon, for rich umami depth

Sugar – 1 teaspoon, to balance the savory notes

Black pepper – ½ teaspoon, freshly ground, for warmth and spice

Beef broth – ¼ cup, to bring the sauce together and enhance richness

Instructions

1. Marinate the beef

Place the thinly sliced beef in a bowl.

Add the soy sauce and cornstarch, then toss until the slices are evenly coated.

Let the beef rest for about 15 minutes so it absorbs the flavor and tenderizes.

2. Sear the beef

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Add the marinated beef in a single layer and stir-fry quickly until the pieces are browned on the outside.

Remove the beef from the pan and set aside.

3. Cook the vegetables

In the same pan, add the remaining tablespoon of oil.

Toss in the onion, green bell pepper, and red bell pepper.

Stir-fry for a few minutes until they are bright in color and tender-crisp.

Add the minced garlic and cook for about 30 seconds, just until fragrant.

4. Bring it all together

Return the beef to the pan. Stir in the oyster sauce, sugar, black pepper, and beef broth.

Mix everything well and let it cook for 2–3 minutes, allowing the sauce to slightly thicken and coat the meat and vegetables evenly.

5. Serve and enjoy

Transfer the pepper steak to a serving dish and enjoy it hot, ideally with steamed rice or noodles to soak up the savory sauce.
