Slumgullion Recipe
Ingredients
Olive oil – 2 tablespoons
Yellow onion – 1, diced
Green bell pepper – 1, diced
Lean ground beef – 1 pound
Garlic – 2 cloves, minced
Beef broth – 2 cups
Tomato sauce – 1 can (15 oz)
Crushed tomatoes – 1 can (15 oz)
Dry macaroni – 1 ½ cups
Worcestershire sauce – 1 tablespoon
Italian seasoning – 2 teaspoons
Bay leaf – 1
Paprika – 1 teaspoon
Cheddar cheese – 1 cup, grated
Kosher salt and black pepper – to taste
Instructions
1. Brown the meat and vegetables
In a large pot or Dutch oven, heat the olive oil over medium-high heat.
Add the diced onion, bell pepper, and ground beef. Season lightly with salt and pepper.
Cook, stirring occasionally, until the beef is browned and the vegetables have softened.
Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
2. Build the sauce
Add the beef broth, tomato sauce, crushed tomatoes, Worcestershire sauce, Italian seasoning, bay leaf, and paprika.
Stir well, season again with a little salt and pepper, and bring the mixture to a boil.
Reduce the heat to low, cover, and simmer for 15–20 minutes to allow the flavors to develop.
3. Cook the pasta
Stir the dry macaroni into the simmering sauce.
Raise the heat to medium-high and cook uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
4. Finish the dish
Remove the pot from the heat and discard the bay leaf.
Stir in the grated cheddar cheese until fully melted, making the sauce rich and creamy.
Taste and adjust seasoning with extra salt and pepper if needed.
5. Serve
Spoon into bowls and enjoy this hearty, comforting classic while hot.
