Ensalada de Atún
Ingredients:
5 cans tuna, drained
2 carrot, diced and cooked until al dente
1 can corn, drained
4 pickled jalapeños, diced
2 tomatoes seeded and diced
2 cups frozen peas, cooked
1/2 red onion, diced
1 bunch green onions, finely chopped
1 heart of romaine lettuce, finely shredded
Handful cilantro, chopped
Juice of 1 large lime
1/2 cup Mayo
1/2 cup Mexican crema
Juice from pickled jalapeños
Garlic powder
Black pepper
Adobo
Season to your liking
Instructions:
Mix everything together and serve on a tostada or with crackers. Top with your choice of hot sauce and avocado.
