Crockpot Cajun Cheddar Potato Soup
Crockpot Cajun Cheddar Potato Soup
Ingredients
Main Ingredients:
6 cups potatoes, peeled and diced
1 small onion, finely chopped
3 cloves garlic, minced
1 bell pepper, chopped (any color works well)
2 celery stalks, diced
1 teaspoon smoked paprika
1 teaspoon Cajun seasoning (add more to taste)
½ teaspoon dried thyme
Salt and freshly ground black pepper, to taste
4 cups chicken or vegetable broth
For Creaminess and Flavor:
1 cup heavy cream or half-and-half
1 tablespoon butter
½ cup shredded cheddar cheese (optional, for extra richness)
For Garnish:
¼ cup chopped green onions
¼ teaspoon cayenne pepper (optional, for added heat)
Instructions
Step 1 – Prepare the Vegetables
Add the diced potatoes, chopped onion, minced garlic, bell pepper, and diced celery to your crockpot. These will form the hearty, flavorful base of your soup.
Step 2 – Season Generously
Sprinkle in the smoked paprika, Cajun seasoning, dried thyme, salt, and black pepper. Stir everything well so the vegetables are evenly coated in the spices — this step helps build that signature Cajun depth.
Step 3 – Add the Broth
Pour in the chicken or vegetable broth, making sure all the vegetables are fully submerged. Stir gently to combine.
Step 4 – Slow Cook to Perfection
Cover and cook on Low for 6–8 hours or High for 3–4 hours, until the potatoes are fork-tender and the flavors have blended beautifully.
Step 5 – Blend for Creaminess
Once the potatoes are soft, use an immersion blender to blend the soup to your preferred texture. For a creamier finish, blend most of it; for a rustic, chunky style, blend only half.
Step 6 – Add Cream and Cheese
Stir in the heavy cream (or half-and-half), butter, and shredded cheddar cheese (if using). Mix until the cheese melts completely and the soup turns luxuriously creamy.
Step 7 – Adjust the Flavor
Taste and adjust the seasoning — add more Cajun spice, salt, or pepper as needed. For extra heat, sprinkle in a touch of cayenne pepper.
Step 8 – Serve and Garnish
Ladle the soup into warm bowls and top with chopped green onions or a bit of extra cheddar cheese.
Serve hot, and enjoy this creamy, smoky, and slightly spicy Cajun comfort dish — perfect for cozy nights or easy weeknight dinners.
