Creamy Chicken Fajita Soup
Ingredients:
1 pound chicken breast (skinless and boneless)
3 cups bell pepper
1 cup onion
15 oz corn (1 can)
10 oz rotel (1 can)
1 cup salsa
32 oz chicken broth
1 oz fajita seasoning
¾ cup half and half
1 cup fiesta blend shredded cheese
Optional: Cilantro and tortilla chips for topping!
Instructions:
Add chicken breast, bell pepper, onion, corn, Rotel, salsa, chicken, and chicken broth into a large pot.
Add fajita and mix together.
Allow to boil then reduce heat to medium and simmer for 30 minutes.
Remove chicken and shred then add the shredded chicken back into the pot.
Add half and half and shredded cheese.
Mix into soup well and allow to cook for 10 more minutes on low.
