Chicken Noodle Pot Pie Soup

Ingredients:

6-8 cup chicken broth

2 cup heavy cream

1/2 cup cheese of your choice (I recommend colby jack or cheddar)

2 cup ditalini noodles

1 yellow onion diced

2-3 stalks celery diced

1 1/2 cup diced baby carrots

4 cloves garlic minced

2 tbsp olive oil

1 tbsp butter

1 medium potato diced

tbsp italian seasoning

1/2 tbsp dried rosemary

1 tbsp parsley

3 chicken tenderloins

1 bay leaf

Instructions:

In soup pot on medium heat add tbsp oil and sauté carrots & celery a couple min

Add tbsp butter & onion and cook all veggies until soft

Add minced garlic to the pot & cook a couple min longer

Add 6 cup chicken broth, bay leaf, italian seasoning, rosemary, parsley & diced potato, bring soup to a simmer & cook until potatoes are fork tender

While soup is simmering heat up olive oil in a separate pan & add chicken tenderloins (season however you’d like I used montreal chicken seasoning)

Once chicken is cooked, shred with forks to desired size and set aside

Once potato’s are fork tender, remove bay leaf; add heavy cream and noodles and cook for time as instructed on the box

Once noodles are done, add cheese & chicken & serve
