Ceviche de Pescado, Jaiva y Camarón
Ingredients:
2 lbs tilapia filets
1 lb jumbo shrimp
2 cans crab meat or 1 pkg imitation crab shredded ( I used the canned cause that’s what I had on hand)
2 large carrots shredded
1 red onion finely diced
3 cucumbers finely diced
3-4 Roma tomatoes finely diced
1 bunch cilantro finely chopped
15 limes
2 juice of oranges
1/2 cup juice from canned Chile’s en vinagre
1 Tbsp Mexican oregano
Avocado
Tostadas
Mayo or crema optional
Hot sauce
Salt and pepper to taste
Instructions:
Step 1:
Add shrimp and tilapia to a food processor and pulse until desired size.
Add lime juice, orange juice and 1/2 cups of the juice from Chile’s en vinagre
Step 2:
Place in fridge covered for 45 min.
Step 3:
Dice up onion, tomatoes, cucumbers and cilantro.
Shred carrots and add all to a separate bowl.
Step 4:
Add tilapia/shrimp mix with a slotted spoon to bowl of veggies add in crab, oregano, salt and pepper to taste with 1/4 cup of juice fish and shrimp were cooked in.
Step 5:
Add mayo to a tostada with diced avocado and your choice of hot sauce.
