Butterscotch Chewies

Ingredients

3 cups brown sugar, for deep caramel-like sweetness

1 1/2 cups butter, melted, for a rich and chewy texture

3 large eggs, to help bind the batter

1 tablespoon vanilla extract, for warm sweet flavor

3 1/4 cups all-purpose flour, for structure

2 teaspoons baking powder, to help the bars rise slightly

2 teaspoons salt, to balance the sweetness

2 cups butterscotch chips, for sweet buttery flavor in every bite

3/4 cup chopped walnuts or cashews, optional, for crunch and nutty flavor

Instructions

Preheat the oven to 350°F.

Lightly grease a 9×13-inch baking dish so the chewies do not stick.

In a large mixing bowl, combine the brown sugar and melted butter.

Stir until the mixture becomes smooth and evenly blended.

Add the eggs and vanilla extract to the bowl.

Mix well until the eggs are fully incorporated and the batter looks glossy.

In a separate bowl, sift or whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture.

Stir just until a thick batter forms. Avoid overmixing.

Fold in the butterscotch chips and chopped nuts, if using.

Spread the batter evenly into the prepared baking dish.

Bake for 55–60 minutes, covering the pan loosely with foil during the last 15 minutes to prevent the top from browning too much.

Remove the dish from the oven and let the chewies cool completely in the pan.

Once fully cooled, slice into squares or bars and serve.
