Vegetable Cream Cheese Tortilla Roll Ups

Ingredients

For the Creamy Base:

4 large flour tortillas (10-inch, soft and flexible)

8 oz cream cheese, softened to room temperature

¼ cup sour cream or plain Greek yogurt — for a lighter, tangier texture

For the Cheese & Veggie Filling:

½ cup shredded sharp cheddar cheese — adds richness and body

¼ cup shredded mozzarella cheese — for creaminess and stretch

½ cup finely diced red bell pepper — adds color and crunch

½ cup grated carrot — for sweetness and texture

⅓ cup chopped green onion — mild onion flavor and freshness

½ cup finely minced broccoli florets — adds nutrients and a subtle earthy note

For the Seasoning:

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon salt (adjust to taste)

⅛ teaspoon freshly ground black pepper

Optional: 1 tablespoon ranch seasoning or a mix of fresh herbs (parsley, dill, or chives) for an extra flavor boost

Instructions:

Step 1: Prepare the Creamy Base

In a medium mixing bowl, combine the softened cream cheese and sour cream (or Greek yogurt).

Beat together with a spatula or hand mixer until smooth and fluffy.

Season with garlic powder, onion powder, salt, black pepper, and — if you like — a touch of ranch seasoning or freshly chopped herbs such as parsley or dill for extra flavor.

Step 2: Add Cheese and Vegetables

Gently fold in the shredded cheddar and mozzarella cheeses, followed by the finely diced red bell pepper, grated carrot, minced broccoli, and chopped green onions.

Mix thoroughly until all ingredients are evenly coated in the creamy mixture.

Step 3: Assemble the Roll-Ups

Lay one tortilla flat on a clean surface.

Spoon one-fourth of the vegetable-cream cheese filling onto the tortilla and spread it evenly to the edges using a spatula or the back of a spoon.

Starting at one edge, roll the tortilla tightly into a log, keeping the filling compact inside.

Repeat with the remaining tortillas and filling.

Step 4: Chill Before Slicing

Wrap each rolled tortilla securely in plastic wrap.

Refrigerate for at least 1 hour (or up to 4 hours) to allow the filling to firm up and make slicing easier.

Step 5: Slice and Serve

Unwrap the chilled rolls and place them seam-side down.

Using a sharp knife, slice into 1-inch rounds for bite-sized pinwheels.

Arrange them neatly on a platter and serve chilled or slightly cool as a refreshing, colorful appetizer or party snack.
