Spicy Jalapeño Popper Thai Red Curry Dumpling Soup
Ingredients:
1 tablespoon neutral oil (such as vegetable or canola)
1 medium yellow onion, finely diced
3 cloves garlic, minced or pressed
1 tablespoon freshly grated ginger, for warmth and depth
2 tablespoons Thai red curry paste, for heat and aromatic spice
4 cups low-sodium vegetable broth, as a light and flavorful base
1 can (14 oz / 400ml) full-fat coconut milk, for creaminess and balance
1 cup filtered water, to adjust consistency
2 cups dumplings, homemade or store-bought (any variety you love)
1 cup baby spinach, loosely packed
1 red bell pepper, thinly sliced for color and sweetness
1–2 fresh jalapeños, sliced (seeds in for heat, out for milder spice)
2 tablespoons soy sauce, for umami and seasoning
1 tablespoon freshly squeezed lime juice, to brighten the broth
Fresh cilantro, roughly chopped, for garnish
Sliced green onions, for fresh crunch and color
Instructions:
Step 1: Sauté the Aromatics
In a large saucepan or soup pot, heat vegetable oil over medium heat. Add the finely chopped onion and cook for about 5 minutes until soft and translucent.
Step 2: Build the Base Flavor
Add the minced garlic and freshly grated ginger. Sauté for 1 minute, stirring constantly, until the mixture becomes fragrant.
Step 3: Incorporate the Curry Paste
Stir in the red curry paste and cook for 1–2 minutes to deepen its flavor and allow the spices to bloom in the oil.
Step 4: Add the Broth and Coconut Milk
Pour in the vegetable broth, coconut milk, and water. Stir well to combine and bring the soup to a gentle simmer.
Step 5: Cook the Dumplings
Add your dumplings—whether frozen, fresh, or homemade—into the simmering broth. Cook until heated through and tender, according to package or homemade directions.
Step 6: Add the Veggies and Heat
Stir in the fresh spinach, red bell pepper slices, and sliced jalapeños. Simmer for 4–5 more minutes until the vegetables are just tender but still vibrant.
Step 7: Season the Soup
Add soy sauce and lime juice to taste, adjusting for saltiness and brightness as needed. Stir gently.
Step 8: Finish and Serve
Ladle the hot soup into bowls and garnish with fresh cilantro and thinly sliced green onions. Serve immediately for the best texture and flavor.
