Spiced Salmon with Cheesy Asparagus & Garlic Herb Potatoes
Ingredients
For the Salmon:
4 salmon fillets (about 1 lb total) – fresh, skin-on or skinless
1 tablespoon olive oil – to coat and seal in moisture
1 tablespoon lemon juice – for brightness and balance
1 teaspoon paprika – adds subtle warmth and color
1 teaspoon garlic powder – for savory depth
Salt and freshly ground black pepper, to taste – to season
For the Cheesy Asparagus:
1 bunch asparagus, trimmed – crisp and tender stalks
1 tablespoon olive oil – for roasting
½ teaspoon garlic powder – enhances flavor
½ cup shredded mozzarella cheese – melty, cheesy topping
Salt and freshly ground black pepper, to taste – to season
For the Garlic Herb Potatoes:
1 pound baby potatoes, halved – small, tender potatoes roast evenly
2 tablespoons melted butter – for richness and crispness
2 cloves garlic, minced – aromatic and flavorful
2 tablespoons fresh parsley, chopped – bright herbal finish
Salt and freshly ground black pepper, to taste – to season
Instructions
Step 1: Prepare the salmon
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rub each salmon fillet with olive oil, then season with paprika, garlic powder, salt, pepper, and lemon juice.
Arrange the fillets evenly on the prepared baking sheet.
Step 2: Prepare the asparagus
Trim the asparagus and place them alongside the salmon on the same baking sheet.
Drizzle with olive oil, then season with garlic powder, salt, and pepper.
Sprinkle shredded mozzarella cheese evenly over the asparagus.
Step 3: Prepare the potatoes
On a separate baking sheet, toss the halved baby potatoes with melted butter, minced garlic, salt, and pepper until well coated.
Spread them out in a single layer to ensure even roasting.
Step 4: Roast everything
Place the salmon and asparagus in the oven and roast for 15–18 minutes, or until the salmon flakes easily with a fork and the cheese is melted and bubbly.
Roast the potatoes for 25–30 minutes, flipping halfway through, until golden brown and crisp.
Step 5: Assemble and serve
Transfer the salmon fillets, cheesy asparagus, and crispy garlic herb potatoes onto plates.
Garnish the potatoes with freshly chopped parsley.
