Smoked Turkey And Veggie Soup

Ingredients:

Smoked turkey-necks , thighs , wings whatever you prefer

1 onion chopped

5-6 garlic gloves chopped

2-3 med to lg carrots graded

1 parsnip – graded

Half of red , yellow , or orange bell pepper chopped

For the veggies. Depends on how much soup you make I used :

Half of zucchini cubed

4 gold potatoes cubed

One big handful of green beans cut in half

3 ears of corn cut in thirds

About 5 baby bell mushrooms sliced

Finishers – fresh tarragon chopped

Spices – salt , pepper, smoked paprika , vegeta, chilly powder and garlic powder

1-2 tablespoons of tomato paste

Instructions:

Place the meat in cold water and boil it skimming the top as needed

Meanwhile sauté the onion , carrots, parsnip , pepper and garlic on medium head season to taste with the seasonings above . Take off heat when they are soft and add to the soup . At this point add the potatoes and green beans, add more spices bring to a boil … once boiling turn to medium low and let it simmer for about 7-10 min

Add zucchini , corn and mushrooms and tomato paste . Taste and see if more seasoning is needed
Once everything is done , potatoes are soft and green beans are done add the fresh tarragon and take off heat

Take the meat off the leg or thigh if using then add the meat back to the soup

Serve with creme fresh or sour cream !
