Quick and Easy Pan Fried Corn Fritters
Ingredients
Fresh corn kernels – 2 cups
All-purpose flour – 1 cup
Baking powder – 1 teaspoon
Salt – ½ teaspoon
Black pepper – ¼ teaspoon
Milk – ½ cup
Egg – 1 large
Butter – 2 tablespoons, melted
Vegetable oil – for frying
Instructions
Make the batter:
In a large mixing bowl, stir together the corn kernels, flour, baking powder, salt, and black pepper.
In a separate bowl, whisk the milk, egg, and melted butter until smooth.
Combine ingredients:
Pour the wet mixture into the dry mixture and stir gently until just combined.
Avoid overmixing to keep the fritters light and tender.
Heat the oil:
Add enough vegetable oil to coat the bottom of a large skillet.
Warm over medium heat until the oil shimmers.
Cook the fritters:
Spoon portions of the batter into the hot skillet, using the back of the spoon to flatten them slightly.
Fry for 2–3 minutes per side, or until golden brown and crisp.
Drain and serve:
Transfer the cooked fritters to a paper towel–lined plate to absorb excess oil.
Serve warm, with your favorite dipping sauce if desired.
