Pineapple Bread
Ingredients
½ cup butter, unsalted and at room temperature
2 eggs
¾ cup sugar
2 tsp baking powder
¼ cup pineapple syrup, drained from the can and saved
2 tbsp milk
1 ½ cups all purpose flour
⅛ tsp salt
1 cup crushed pineapple, drained, saving the syrup
Glaze:
1 cup Confectioners sugar
1 tsp vanilla extract
2 tbsp pineapple syrup, saved from the can( you may need more, depending on consistency)
Instructions
Preheat the oven to 350* and grease an 8×4 loaf pan
In a large bowl, mix together the sugar and butter until it is fluffy
Add in the eggs, one at a time, beating after each
In another bowl, mix the flour with the baking powder and salt
Add in the pineapple syrup to the butter mix, then add half of the flour mix.
Gently mix this together and slowly add in the remaining flour, stirring continuously.
Add in the milk and stir one more time.
Gently fold in the crushed pineapple
Pour the batter into the prepared pan and place on the center rack in preheated oven
Bake for 50 to 55 minutes until set in the middle and a toothpick comes out clean.
Let sit in the pan for 10 minutes
Turn out onto a cooling rack to finish cooling
Make the glaze and slowly pour it over the bread. If you want your glaze to remain somewhat thick, be sure to wait until the bread is completely cooled down before pouring the glaze on top
