No Bake Baileys Cheesecake Balls

Ingredients

2 dozen chocolate covered butter cookies

8 ounces mascarpone cheese

⅓ cup Irish Cream Liqueur

2 ounces dark chocolate, chopped

10 ounces white chocolate chopped

Instructions

Crush the cookies and place into a bowl

Add the Irish Cream to the cookie crumbs

Add in the tub of mascarpone cheese

Blend together completely

Line a baking tray with parchment paper

Using a small cookie scoop, begin to make the cheesecake balls and place them on the tray

Place the tray into the freezer for at least 45 minutes to freeze, longer if you have the time.

Using a double boiler, place the chopped white chocolate into the top pan, stirring constantly until all melted.

Be sure to scrape the sides as the water is boiling and melting the chocolate

Dip each cheesecake ball into the white chocolate and place back onto the tray

Return the dipped balls back to the refrigerator for an hour.

Using the double boiler method, melt the chopped chocolate in the top pan, scraping the sides while it is melting.

When melting is complete, remove the tray from the refrigerator and drizzle melted chocolate over the tops of the cheesecake balls.

Allow to set for at least 30 minutes before serving.
