Mexican Beef Lengua

Ingredients:

1 beef lengua

1-2 bay leaf (optional)

1 tbsp. each of salt, pepper, adobo, sazon, cumin

6 cups water

veggies diced–2 roma tomatoes, 1/2 onion, 1 serrano pepper, 1 poblano pepper, 1 jalapeño

pepper(all peppers are optional to your level of spiciness)

Instructions:

Cook lengua in water for 3 hours or more until tender.

Let cool.

Peel the lengua before cutting into pieces

In a pan, add in the lengua, seasonings and veggies.

Add some of the lengua broth and let simmer for about 30 mins.
