Ingredients

For the Chicken Cutlets

4 boneless, skinless chicken cutlets (about 1.5 lbs)

½ cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

¼ cup fresh basil, finely chopped

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

¼ cup olive oil

For the Topping

2 large ripe tomatoes, diced

8 ounces burrata cheese

2 tablespoons balsamic glaze

Fresh basil leaves

Instructions

Prepare the Chicken

Place the chicken cutlets between two sheets of parchment or plastic wrap and gently pound them to an even ½-inch thickness for uniform cooking.

Season both sides with salt and black pepper.

Set Up the Breading Station

Arrange three shallow bowls:

One with flour,

One with beaten eggs,

And one with a mixture of panko breadcrumbs, grated Parmesan, chopped fresh basil, and garlic powder.

This setup ensures a smooth, mess-free coating process.

Bread the Cutlets

Lightly dredge each cutlet in the flour, shaking off any excess.

Dip it into the egg to coat, then press it firmly into the breadcrumb mixture so the crust adheres evenly.

Pan-Fry to Perfection

Heat olive oil in a large skillet over medium-high heat.

Once shimmering, add the breaded chicken cutlets and cook for 4–5 minutes per side, or until they turn a deep golden brown and are cooked through.

Transfer the cutlets to a paper towel–lined plate to rest.

Prepare the Fresh Tomato Topping

In a small bowl, combine the diced tomatoes with a pinch of salt.

Let them sit for about 5 minutes to draw out their natural juices and intensify their flavor.

Assemble the Dish

Place a crispy chicken cutlet on each serving plate.

Spoon the tomato mixture generously over the top, then tear the burrata into pieces and arrange them across the warm cutlet so they soften slightly from the heat.

Add the Finishing Touches

Drizzle with balsamic glaze for sweetness and tang.

Garnish with fresh basil leaves for a burst of color and fragrance.
