Creamy Garlic Chicken & Mushroom Alfredo Spaghetti
Ingredients
For the pasta
Cooked chicken – sliced or shredded, tender and ready to toss into the sauce
Spaghetti or linguine – your choice of long pasta, cooked al dente
Mushrooms – sliced (cremini, button, or a mix for depth of flavor)
Garlic – minced, for aromatic richness
Onion – diced, to build a savory base
Olive oil & butter – for sautéing and flavor balance
Chicken broth – adds depth and keeps the sauce light yet flavorful
Heavy cream or half-and-half – for a luscious, creamy texture
Parmesan cheese – freshly grated, to melt into the sauce
Italian seasoning or thyme – for herbal warmth
Salt & black pepper – to season and balance flavors
Optional toppings
Fresh parsley – for a burst of freshness
Red pepper flakes – a touch of gentle heat
Extra parmesan – because you can never have too much cheese
Instructions
1. Cook the pasta
Bring a large pot of salted water to a boil.
Cook the spaghetti or linguine until al dente according to package directions.
Drain, reserving about 1 cup of pasta water, and set aside.
2. Sauté the aromatics
In a large skillet, heat olive oil and butter over medium heat.
Add the diced onion and minced garlic, cooking until softened and fragrant, about 2–3 minutes.
3. Cook the mushrooms
Add the sliced mushrooms to the skillet and sauté until golden brown and tender, about 5 minutes.
4. Build the sauce
Pour in the chicken broth and heavy cream (or half-and-half).
Stir and let the mixture simmer gently until slightly thickened.
Reduce the heat, then stir in the Parmesan cheese, Italian seasoning (or thyme), salt, and black pepper.
5. Combine pasta and chicken
Add the cooked chicken and pasta to the skillet.
Toss everything together until the noodles are evenly coated in the creamy sauce.
Use a splash of reserved pasta water if needed to loosen the sauce.
6. Garnish and serve
Plate the pasta and finish with fresh parsley, extra Parmesan, and a sprinkle of red pepper flakes, if desired.
Serve immediately while warm and creamy.
