Ingredients
For the Oysters
12 fresh oysters, shucked and kept on the half shell
2 ounces pancetta, finely diced
1/4 cup unsalted butter, softened
2 garlic cloves, minced
2 tablespoons grated Parmesan cheese
1 tablespoon lemon juice
1 teaspoon lemon zest
1 tablespoon fresh parsley, finely chopped
1/4 teaspoon black pepper
Pinch of salt, only if needed
Lemon wedges, for serving

Small pinch of red pepper flakes
Instructions
Preheat your oven broiler to high.
Place the oven rack about 6 inches below the broiler.
Arrange the shucked oysters on a broiler-safe pan, oyster tray, or baking sheet. To keep them steady, you can place them over a layer of coarse salt or crumpled foil.
In a small skillet over medium heat, cook the diced pancetta until lightly browned and crisp.
Remove the pancetta from the skillet and let it drain on a paper towel.
In a small bowl, mix the softened butter, minced garlic, Parmesan cheese, lemon juice, lemon zest, chopped parsley, black pepper, and cooked pancetta.
Stir until everything is evenly combined into a savory pancetta butter.
Spoon a small amount of the pancetta butter mixture over each oyster.
Place the oysters under the broiler.
Broil for about 4 to 6 minutes, or until the butter is bubbling, the edges of the oysters begin to curl, and the tops look lightly golden.
Watch closely because oysters can overcook quickly.
Remove from the oven and let them cool for 1 minute.
Garnish with extra parsley, a little Parmesan, or cracked black pepper if desired.
Serve immediately with lemon wedges on the side.
