Banana Pudding Tacos
Ingredients
Filling:
1 large box instant banana flavored pudding mix
2 cups milk
1 banana sliced
½ to 1 cup miniature Nilla Wafer cookies
Vanilla Taco Shells:
2 cups flour
½ tsp salt
1 cup granulated sugar
4 eggs
1 stick butter, or one cup of butter, melted
½ cup whole milk
1 tsp vanilla extract
Toppings:
Whipped Topping
½ cup Vanilla Wafer Cookie crumbs
Instructions
In a medium bowl combine the instant pudding mix with the milk and mix well until it is smooth
Using a stand mixer combine the bananas with the Nilla Wafer cookies, mix this with the pudding mix and then place into the refrigerator until the shells are made
Combine the flour and the salt
In a separate bowl combine the eggs and the sugar
Add the egg mixture to the flour mixture and mix well, add in the melted butter
Add in the milk and the vanilla and beat well, until the batter is somewhat loose
Heat a waffle cone iron to medium high
Add ¼ cup of the batter and cook until lightly browned
Take it off the burner and using a taco stand, drape the cooked form over the stand or you can fold it slightly in half and place the folded portion between the cups on the bottom side of a muffin pan
To assemble the Tacos, place equal amounts of pudding in each taco shell. Top with whipped cream and sprinkle with crushed Nilla Wafers
