Banana Bread Crumb Cake

Ingredients

2 cups plain (all-purpose) flour

3 teaspoons baking powder

1/2 teaspoon fine salt

1/2 teaspoon ground cinnamon

3 very ripe bananas, lightly speckled

1/2 cup (1 stick) unsalted butter, softened to room temperature

1 1/2 cups white granulated sugar

2 large eggs, room temperature

1 teaspoon pure vanilla extract

1 cup whole milk

For the crumb topping:

1 cup (2 sticks) cold unsalted butter, cut into small cubes

2 cups packed light brown sugar

2 cups plain (all-purpose) flour

Instructions

Preheat your oven to 350°F. Grease a 9×13-inch baking dish with butter or nonstick spray.

In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.

In a large bowl, mash the bananas until smooth. Add the butter, sugar, eggs, and vanilla, and mix until fully combined.

Gradually add the dry ingredients to the banana mixture, alternating with the milk. Stir gently after each addition until everything is just combined. Set the batter aside.

To make the crumb topping:
In a large bowl, combine the cold butter, brown sugar, and flour. Use a fork or pastry cutter to mix until the texture resembles coarse crumbs.

Spread half of the batter into the prepared baking dish. Sprinkle one-third of the crumb topping over it. Add the remaining batter on top, then finish with the rest of the crumb mixture.

Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.

Let cool slightly before serving. Enjoy warm or at room temperature.
