Blueberry Pie Bars
Ingredients
For the Crust & Topping
1 ½ cups all-purpose flour
¾ cup granulated sugar
¼ teaspoon salt
¾ cup (1½ sticks) unsalted butter, cold and cut into small cubes
1 teaspoon vanilla extract
For the Blueberry Filling
2 large eggs
¾ cup granulated sugar
½ cup sour cream
⅓ cup all-purpose flour
¼ teaspoon salt
3 cups fresh blueberries
Instructions
Preheat and Prepare the Pan
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray, then set it aside.
Make the Crust Mixture
In a large bowl, combine the flour, sugar, and salt. Add the chilled, cubed butter and vanilla extract.
Using an electric mixer, blend until the mixture becomes crumbly with small, coarse pieces.
Form and Bake the Crust
Set aside 1 cup of the crumb mixture for the topping.
Press the remaining mixture firmly and evenly into the bottom of the prepared baking dish.
Bake for about 15 minutes, until lightly set.
Prepare the Filling
While the crust bakes, use a clean bowl to beat the eggs until light and slightly foamy.
Add the sugar, sour cream, flour, and salt, and mix until smooth and well combined.
Gently fold in the blueberries, being careful not to crush them.
Assemble the Bars
Pour the blueberry filling evenly over the warm, partially baked crust.
Sprinkle the reserved crumb mixture over the top.
Bake Until Golden
Return the dish to the oven and bake for 45–55 minutes, or until the top is golden brown and the filling is set.
Cool and Serve
Remove from the oven and allow the bars to cool for at least 1 hour before slicing.
This helps them firm up for clean cuts. Serve and enjoy!
