Crack Chicken Enchiladas
Ingredients
For the Crack Chicken Filling
– 4 cups cooked rotisserie chicken, shredded
– 8 ounces cream cheese, softened
– 1 cup shredded Monterey Jack cheese
– 1 cup shredded cheddar cheese
– ½ cup cooked bacon, crumbled
– ⅓ cup sour cream
– 2 tablespoons ranch seasoning
– 1 teaspoon garlic powder
– ½ teaspoon onion powder
– ½ teaspoon ground cumin
– ¼ teaspoon black pepper
– ¼ cup sliced green onions
– 1 small jalapeño, finely diced, optional
For the Enchiladas
– 10–12 medium flour tortillas
– 4 tablespoons butter, melted
– 2½–3 cups red enchilada sauce
– 1 cup shredded Monterey Jack cheese
– 1 cup shredded cheddar or Mexican-blend cheese
Optional Garnishes
– Fresh cilantro, chopped
– Green onions, sliced
– Fresh jalapeño slices
– Sour cream
– Diced avocado
– Pico de gallo
Instructions
Prepare the Crack Chicken Filling
Place the shredded rotisserie chicken in a large mixing bowl.
Add the softened cream cheese, Monterey Jack, cheddar, crumbled bacon, sour cream, ranch seasoning, garlic powder, onion powder, cumin, and black pepper.
Add the green onions and jalapeño, if using.
Mix until everything is evenly combined and the chicken is thoroughly coated in the creamy cheese mixture.
Prepare the Baking Dish
Preheat the oven to 400°F / 200°C.
Lightly grease a 9 × 13-inch baking dish.
Spread only a very thin layer of enchilada sauce across the bottom—just enough to keep the tortillas from sticking.
Fill the Tortillas
Place approximately ⅓ cup of chicken filling across the center of each flour tortilla.
Roll the tortilla tightly around the filling.
Arrange the enchiladas seam-side down in the prepared baking dish.
Continue until all of the filling has been used.
Use the Buttery Baking Trick
Brush the tops and exposed sides of the rolled enchiladas generously with melted butter.
At this stage, do not completely cover them with enchilada sauce.
Bake uncovered for about 8–10 minutes, or until the tortillas begin to turn lightly golden and develop a slightly crisp surface.
This step mimics some of the texture you would normally get from frying tortillas.
Add the Enchilada Sauce
Remove the baking dish from the oven.
Pour the red enchilada sauce evenly over the enchiladas, concentrating it along the center while allowing a few tortilla edges to remain slightly exposed if you want more texture.
Use the back of a spoon to spread the sauce evenly.
Add the Cheese
Sprinkle the Monterey Jack and cheddar or Mexican-blend cheese generously over the enchiladas.
For the appearance shown in the photo, leave some of the dark red sauce visible around the edges of the baking dish rather than covering everything completely with cheese.
Finish Baking
Return the enchiladas to the oven.
Bake uncovered for another 15–20 minutes, until the sauce is bubbling and the cheese is fully melted.
For lightly browned cheese, place the dish under the broiler for 1–2 minutes at the end.
Watch carefully so the cheese does not burn.
Rest Before Serving
Remove the baking dish from the oven and let the enchiladas rest for approximately 5–10 minutes.
This helps the creamy chicken filling settle and makes the enchiladas easier to serve.
Garnish and Serve
Finish with chopped cilantro, sliced green onions, jalapeños, or any other toppings you enjoy.
Serve hot with sour cream, avocado, Mexican rice, refried beans, charro beans, or a crisp salad.
What the Finished Enchiladas Should Be Like
The tortillas should be soft where they absorb the red enchilada sauce but slightly golden and structured around the edges from the initial butter bake.
Inside, the filling should be rich and creamy with plenty of shredded chicken, melted cheese, smoky bacon, and ranch flavor.
The enchilada sauce should remain bold and savory rather than disappearing completely into the cheese.
The top should have a generous layer of melted cheese with streaks of red sauce visible through it, similar to the photo.
