Zucchini Lasagna Roll Ups

Ingredients

3 large zucchini, trimmed and sliced lengthwise into about 24 thin strips (⅛-inch thick)

Kosher salt and freshly ground black pepper, to taste

1 tablespoon olive oil

¾ pound Italian sausage, casing removed

1 cup part-skim ricotta cheese

⅓ cup grated Parmesan cheese

1 large egg

¼ cup fresh basil, finely chopped

2 garlic cloves, minced

1½ cups marinara sauce, divided

2 cups shredded mozzarella cheese, divided

Instructions

Prepare the zucchini

Line a baking sheet with paper towels.

Arrange the zucchini slices in a single layer on the prepared sheet.

Lightly sprinkle them with salt and let them sit for about 15 minutes.

This helps draw out excess moisture from the zucchini.

Cook the sausage

Heat the olive oil in a large cast iron skillet over medium heat.

Add the Italian sausage and cook until browned, about 3–5 minutes, breaking it into small pieces as it cooks.

Once fully cooked, drain off any excess grease.

Make the filling

In a medium bowl, combine the cooked sausage, ricotta cheese, grated Parmesan, egg, chopped basil, and minced garlic.

Season the mixture with salt and freshly ground black pepper, then stir until everything is well blended.

Preheat the oven

Preheat your oven to 400°F (200°C).

Prepare the baking dish

Spread 1 cup of marinara sauce evenly across the bottom of a large cast iron skillet or baking dish.

Assemble the roll ups

Spread about 1 tablespoon of the ricotta mixture evenly over each zucchini slice.

Sprinkle 1 tablespoon of mozzarella cheese on top of the filling.

Carefully roll up each zucchini slice and place it seam-side down in the prepared skillet.

Continue until all the zucchini slices and filling are used.

Add sauce and cheese topping

Spoon the remaining ½ cup marinara sauce over the zucchini rolls.

Sprinkle the remaining 1 cup mozzarella cheese evenly over the top.

Bake the roll ups

Transfer the skillet to the oven and bake for 25–30 minutes, or until the roll ups are heated through and the cheese on top is melted and lightly golden.

Serve

Remove from the oven and serve the zucchini lasagna roll ups immediately while warm.
