Creamy Spinach and Mushroom Tortellini Soup
Ingredients
Butter or Olive Oil – 2 tablespoons
Mushrooms – 8 ounces, quartered or sliced
Yellow Onion – 1 medium, finely diced
Garlic – 2 cloves, chopped
Fresh Thyme – 1 teaspoon, chopped
All-Purpose Flour – ¼ cup (or rice flour for a gluten-free option)
White Wine or Broth – ½ cup
Vegetable or Chicken Broth – 6 cups
Cheese Tortellini – 8 ounces (use gluten-free if desired)
Parmesan Cheese (Parmigiano-Reggiano) – ½ cup, freshly grated
Baby Spinach – 10 ounces, coarsely chopped
Cream or Milk – ½ cup
Salt and Freshly Ground Black Pepper – to taste
Instructions
Step 1: Sauté the Vegetables
In a large pot or deep skillet, melt the butter (or heat the oil) over medium-high heat.
Add the mushrooms and diced onion, cooking for 10–15 minutes, stirring occasionally, until the mushrooms release their moisture and the liquid fully evaporates. The mixture should turn lightly golden and aromatic.
Step 2: Add Garlic and Herbs
Stir in the chopped garlic and fresh thyme. Cook for about 1 minute, just until fragrant.
Sprinkle in the flour and stir continuously for 2–3 minutes, allowing it to toast lightly and form a smooth base for the soup.
Step 3: Deglaze the Pan
Pour in the white wine (or broth) and use a wooden spoon to scrape up any flavorful browned bits from the bottom of the pan. Let it simmer for 1–2 minutes to reduce slightly.
Step 4: Simmer the Soup
Pour in the vegetable or chicken broth, stirring well to combine.
Add the cheese tortellini and bring the soup to a gentle boil.
Reduce the heat and let it simmer for 10 minutes, or until the tortellini are tender and cooked through.
Step 5: Add Cheese and Spinach
Stir in the grated Parmesan cheese until it melts smoothly into the broth.
Add the chopped spinach and cook for 2–3 minutes, just until wilted and vibrant green.
Step 6: Finish with Cream and Seasoning
Lower the heat and pour in the cream (or milk). Stir gently to blend everything into a luscious, creamy consistency.
Season with salt and pepper to taste, adjusting for balance and richness.
Step 7: Serve and Enjoy
Remove from heat and ladle the soup into bowls.
Garnish with extra Parmesan, fresh thyme, or cracked black pepper for a beautiful finishing touch.
