Hamburger Gravy with Green Chile Served Over Red Potato Garlic Mashed Potatoes
Ingredients:
4 cups beef stock
4 cups to 2 takes about an hour.
cornstarch
ground beef
diced white onion
minced garlic
chopped green chile
Mashed Potatoes:
3 garlic cloves
red potatoes
Kerrygold butter
sour cream
little salt
pepper
Instructions:
The rich gravy is made with beef stock that I reduce in half over low heat, 4 cups to 2 takes about an hour.
Add a bit of cornstarch to water to make a slurry.
Cook ground beef with diced white onion, add minced garlic towards the end.
Add about a cup of chopped green chile to the ground beef and cooked for a few minutes while I add the reduced beef stock and slowly stir in a few tablespoons of the slurry to thicken.
You can also thicken with flour but I love a glossy deep rich flavored beef gravy, my Albuquerque Grandma would sometimes add a splash of soy sauce instead of salt for a nice umami finish and I did the same today.
Mashed Potatoes:
Mashed potatoes are skins on small red potatoes that I boil.
Add three garlic cloves to the water as well. When potatoes are soft, drain water and hand smash the potatoes and garlic, add what you like.
I used lots of Kerrygold butter and a bit of sour cream, and a little salt and pepper.
