Super Easy Shepards Pie

Ingredients

1 pound Ground Beef, lean

2 onions, finely diced

2 tbsp Oil

1 Garlic Clove, minced

2 stalks celery, sliced thin

2 Carrots, finely chopped

Gravy:

⅓ cup Red Wine

1 cup Beef Broth

¼ tsp Paprika

½ tsp Salt

2 tbsp Tomato Paste

2 tbsp Flour

1 tsp Rosemary

1 tbsp Parsley, chopped

½ tsp Thyme

1 cup Peas, frozen, then thawed

Topping:

4 cups Mashed Potatoes

½ to ¾ cups Cheddar Cheese, shredded

Instructions

In a deep skillet over medium high heat, crumble and brown the ground beef

Add in the vegetables and cook until the vegetables are soft

Preheat the oven to 400*

Lightly spray a 9×13 baking dish

Season the meat with salt, pepper and paprika

Add in the tomato paste and stir until it is mixed

Add in the Red Wine and stir to combine all, scraping bits off the bottom of the skillet

Add in the beef broth, peas and the herbs

Stir and simmer for 5 to 10 minutes

Spoon the mixture into the prepared baking dish

Make the mashed potatoes

Carefully spread over the top of the mixture in the pan, being careful not to combine the potatoes with the grave

Using the tines of the fork, make lines across the top of the potatoes in both directions

Sprinkle with the cheese

Place in the oven and bake for 20 minutes or until the potato tops are brown
