Notes:
Squash Selection: If you prefer a different type of squash, zucchini can be substituted for yellow squash. Adjust the cooking time slightly if the slices are thicker.
Vegetable Variations: Feel free to add other vegetables like mushrooms or corn for extra flavor and texture. Just ensure they are pre-cooked and drained if needed.
Cheese Options: While Cheddar cheese is classic, you can use other cheeses like Monterey Jack, Gruyère, or a blend for different flavor profiles.
Mayonnaise and Sour Cream: For a lighter version, you can use Greek yogurt instead of sour cream or reduce the amount of mayonnaise.
Cracker Topping: If you want a gluten-free option, substitute the Ritz crackers with gluten-free breadcrumbs or crushed gluten-free crackers.
Butter Alternatives: You can use margarine or a dairy-free butter substitute for the cracker topping if you have dietary restrictions.
Seasoning: Adjust the salt and pepper according to your taste. Adding a pinch of garlic powder or dried herbs like thyme or basil can enhance the flavor.
Casserole Pan: A 9×9 or 8×8 baking pan works best, but you can use a similar-sized dish. If using a larger pan, adjust the baking time to ensure the casserole is set and golden.
Make-Ahead: This casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add a few extra minutes to the baking time if baking straight from the fridge.
Leftovers: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until heated through.
