Mini Pepper Poppers
Ingredients
16 oz mini sweet peppers
1 block cream cheese, 8 oz, softened
1/4 cup sour cream
1 to 2 green onions, finely chopped
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh dill, finely chopped
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and black pepper, to taste
Extra fresh dill, optional, for making “carrot tops”
Instructions
Slice each mini sweet pepper in half lengthwise. Remove the seeds and any white membranes from the inside.
In a small mixing bowl, combine the softened cream cheese, sour cream, green onions, parsley, dill, garlic powder, onion powder, salt, and black pepper.
Stir until the filling is smooth, creamy, and well blended.
Spoon or spread the cream cheese mixture into the hollow center of each pepper half.
Use a small knife or spatula to smooth the filling evenly inside the peppers.
Arrange the filled peppers on a serving plate or tray.
For a fun carrot-style look, gently place a small sprig of fresh dill into the top of each filled pepper.
Chill the mini pepper poppers in the refrigerator until ready to serve.
Serve cold as a fresh appetizer, snack, or party bite.
