Meatloaf With Mashed Potatoes And Cheese

Ingredients:

1 tbsp. Olive Oil Minced

3 tsp. Garlic

1 Onion Chopped

1 ½ lb. Beef Ground

¾ cup Breadcrumbs

¼ cup Tomato Sauce

1 Large Egg

¼ cup Bbq Sauce

½ cup Frozen Peas

¼ cup Fresh Parsley Chopped

Salt And Pepper To Taste

For The Potatoes:

4 tbsp. Butter

1 ½ lb. Potatoes Peeled And Cut Into Pieces

¼ cup Heavy Whipping Cream

1 cup Cheddar Cheese Shredded

Salt And Pepper To Taste

Instructions:

Preheat your oven to 400 degrees.

Heat the oil in a skillet over medium temperature.

Add the onions to the skillet and saute until tender.

Stir in the garlic, and saute another 30 seconds. Remove, and let cool.

Add the cooled onion mixture and the rest of the ingredients to a mixing bowl. Knead with your hands until combined.
