Meatloaf With Cheesy Potatoes

Ingredients

1 ½ lbs Ground Beef

1 tbsp Olive Oil

3 tsp Garlic, freshly minced

1 yellow onion, diced

¼ cup Tomato Sauce

¾ cup bread crumbs

1 large egg

¼ cup BBQ sauce

½ cup pease, frozen

¼ cup Parsley, freshly chopped

Potatoes:

1 ½ lbs potatoes, peeled and chunked

4 tbsp butter

¼ cup Heavy whipping cream

1 cup Cheddar Cheese

Salt and pepper to taste

Instructions

Preheat the oven to 400*

Heat the Oil in a skillet over medium high heat

Add onions to the skillet and saute until tender

Stir in the garlic and saute for another 30 seconds

Add the cooled onion, garlic mixture to the ground beef and remaining ingredients for the meatloaf, and knead with your hands to combine

Form the meat into a loaf and place into a casserole dish

Bake for 30 minutes
