Italian Brussels Sprout Salad

Ingredients:

3 cups shaved Brussels sprouts (raw, thinly sliced or store-prepared)

1 cup cherry tomatoes, halved

½ cup thinly sliced salami or Italian deli meat

1 cup canned chickpeas, drained and rinsed

¼ cup red onion, thinly sliced

¼ cup black olives, pitted and halved (Kalamata or ripe olives work well)

¼ cup shaved Parmesan cheese

¼ to ⅓ cup Italian vinaigrette or balsamic vinaigrette (store-bought or homemade)

Freshly ground black pepper, to taste

Instructions:

Combine ingredients: In a large mixing bowl, add the shaved Brussels sprouts, halved cherry tomatoes, sliced salami, chickpeas, thinly sliced red onions, and black olives.

Dress the salad: Drizzle with your favorite Italian dressing or balsamic vinaigrette. Toss well to evenly coat all ingredients.

Finish with toppings: Sprinkle shaved parmesan over the top and season with freshly cracked black pepper.

Chill and serve: Refrigerate for at least 15–20 minutes before serving to allow the flavors to meld. Serve cold for the best texture and flavor.
