Southern-Style Chicken Potato Soup
Ingredients
Olive oil – 2 tablespoons
Onion – 1 medium, diced
Garlic – 2 cloves, minced
Potatoes – 3 medium, peeled and diced
Chicken broth – 4 cups
Cooked chicken – 2 cups, shredded
Heavy cream – 1 cup
Frozen corn – 1 cup
Paprika – 1 teaspoon
Dried thyme – 1 teaspoon
Salt and black pepper – to taste
Fresh parsley – 2 tablespoons, chopped
Instructions
Sauté the aromatics:
In a large pot, heat the olive oil over medium heat.
Add the diced onion and cook until softened and fragrant, about 4–5 minutes.
Stir in the minced garlic and cook for 1 additional minute.
Add the potatoes:
Stir in the diced potatoes and cook for 3–4 minutes, allowing them to absorb the flavors.
Simmer with broth:
Pour in the chicken broth and bring the mixture to a boil.
Reduce the heat to low and simmer for 15–20 minutes, or until the potatoes are fork-tender.
Incorporate chicken, cream, and corn:
Add the shredded chicken, heavy cream, and frozen corn to the pot.
Stir well to combine.
Season the soup:
Sprinkle in the paprika, dried thyme, salt, and black pepper.
Continue to simmer gently for about 10 minutes to let the flavors meld.
Finish and serve:
Remove the pot from the heat and stir in the freshly chopped parsley.
Ladle the soup into bowls and serve hot.
