Healthy Wonton Soup with Chicken Dumplings

Ingredients

1 package Trader Joe’s Chicken Soup Dumplings (or any frozen dumplings)

4 cups chicken broth (low-sodium preferred)

1 tsp freshly grated ginger

2 garlic cloves, minced

1 tbsp soy sauce

1 tbsp mirin (optional but recommended)

1 tsp rice vinegar

1 tsp sesame oil

1 cup broccoli florets

½ cup sliced mushrooms (shiitake or button)

1–2 heads baby bok choy, chopped

2 green onions, sliced

Sesame seeds, for garnish

Garlic chili paste or sriracha, to taste

Instructions

Make the broth:

In a medium pot, heat sesame oil over medium heat. Add garlic and ginger and sauté for 30 seconds until fragrant.

Simmer the base:

Pour in the chicken broth, soy sauce, mirin, and rice vinegar. Stir and bring to a gentle boil.

Cook the vegetables:

Add broccoli, mushrooms, and bok choy to the pot. Simmer for 3–5 minutes or until veggies are tender but still vibrant.

Steam the dumplings:

Meanwhile, microwave or steam the soup dumplings according to package instructions.

Assemble:

Place dumplings in serving bowls. Ladle hot broth and vegetables over the top.

Garnish & Serve:

Top with sliced green onions, a sprinkle of sesame seeds, and a spoonful of garlic chili paste for extra heat. Serve hot!

Tips & Swaps

No bok choy? Use spinach, kale, or napa cabbage.

Extra protein? Add shredded chicken or a soft-boiled egg.

Add noodles to make it more filling (try soba or rice noodles).

More veggies? Snow peas, carrots, zucchini, or baby corn work great!
