Healing Soup

Ingredients:

600 g chicken any part will work

1 medium red pepper

150 g butternut squash

1 medium parsnip

1 large onion

1 large carrot

2 stalks celery

2-3 potatoes

parsley (to garnish)

80 g pasta (homemade)

2 teaspoon salt or 2 stock cubes

1 indulgent pinch pepper freshly ground

Instructions

Place the washed meat with 1.5l water in a pot over high heat. Add ½ of the salt. When this is boiling keep an eye on it and collect all the foam that forms at the top of the water. Allow boiling for about 20 min covered.

Meanwhile, peel, wash, and chop all vegetables.

Add all chopped veggies to the meat and boil covered for an extra 15-20 minutes.

In the last 3 minutes of boiling, add the pasta, allow 3 min to boil, and turn the heat off. Allow the soup to rest covered for an extra 10 min before serving.

Chop some parsley or dill and sprinkle over before eating.

Semolina Dumplings

Beat one egg rigourously and add semolina little by little.

Add salt, pepper and beat after each addition of semolina until really fluffy. (Approx Ratio 1 egg :4 tbsp semolina).

The mix should be the consistency of macaroons batter I would say.

Allow it rest at least 20 min and then with a little spoon scoop out and add to the simmering soup. Turn the dumplings after 3-4 min.

Tips:

If the soup it’s boiling too hard the dumplings will break, so make sure it’s at a simmering point and don’t forget to turn them around by tilting them on the other side using a spoon or a fork.

The more you will make those dumplings, the better you will become at it.

The secret is beating the egg and semolina to a fluffy consistency.
