Green Chile Cheese Cornbread

Ingredients:

1/2 cup grated Monterey Jack cheese

10 inch cast iron skillet

one cup corn

1/2 cup green chile

1/2 cup of grated cheese

1/3 block of cream cheese and spices

black pepper

red chile flakes

garlic salt

1/2 cornbread mix

corn chile mixture

a little extra chile

some pepper jack cheese

Instructions:

Fancy cornbread to go with our beans.

Start with a mix of cornbread prepared as instructed adding 1/2 cup grated Monterey Jack cheese and heated my oven (with 10 inch cast iron skillet in it) to 425.

In separate bowl, mix one cup corn, 1/2 cup green chile, 1/2 cup of grated cheese, about 1/3 block of cream cheese and spices, I used black pepper, red chile flakes and garlic salt.

In hot skillet add 1/2 cornbread mix, corn chile mixture and top with remaining batter.

Add some pepper jack cheese bombs and a little extra chile to the top and baked 22 minutes…watching closely for a perfect crust
