Golden Crispy Cauliflower Bites

Ingredients

For the Cauliflower Bites

1 large head cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup milk (or plant-based milk alternative)

2 cups panko breadcrumbs

½ cup grated Parmesan cheese (optional)

Olive oil spray, as needed

For the Optional Dipping Sauce

½ cup plain Greek yogurt

2 tablespoons sriracha sauce

1 tablespoon honey

1 tablespoon fresh lime juice

Salt and pepper, to taste

Instructions

Preheat the Oven

Preheat your oven to 425°F (220°C).

Line a large baking sheet with parchment paper or lightly grease it to prevent sticking and ensure even crisping.

Prepare the Cauliflower

Trim the cauliflower and cut it into evenly sized florets.

This helps them cook uniformly and achieve a consistent golden crunch.

Make the Batter

In a medium mixing bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, and pepper.

Gradually pour in the milk while whisking until you get a smooth, lump-free batter with a slightly thick coating consistency.

Coat the Florets

Dip each cauliflower floret into the batter, ensuring it’s fully coated.

Let the excess batter drip off to avoid clumping.

Add the Crunch Layer

In a shallow dish, mix the panko breadcrumbs with grated Parmesan (if using).

Roll each battered floret in the breadcrumb mixture, pressing lightly so the coating sticks well.

Bake to Crisp Perfection

Arrange the coated florets in a single layer on the prepared baking sheet, leaving space between each piece for air circulation.

Spray the tops generously with olive oil.

Bake for 25–30 minutes, flipping halfway through, until they’re golden brown and crunchy on all sides.

Prepare the Dipping Sauce (Optional)

In a small bowl, whisk together Greek yogurt, sriracha, honey, lime juice, and a pinch of salt and pepper.

Adjust to taste and chill until ready to serve.

Serve and Enjoy

Serve the cauliflower bites hot and crispy, fresh out of the oven.
