Farmer’s-Style Casserole
Ingredients
Frozen shredded hash brown potatoes – 6 cups
Monterey Jack cheese – 2 cups, freshly grated
Cooked ham – 2 cups, diced
Green onions (scallions) – ½ cup, chopped
Large eggs – 8, lightly beaten
Evaporated milk – 2 cans (12 ounces each)
Garlic salt – ½ teaspoon
Ground black pepper – ¼ teaspoon
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C) so it’s ready when the casserole is assembled.
2. Layer the Ingredients
Spread the frozen shredded hash browns evenly across the bottom of a 9×13-inch baking dish.
Sprinkle the grated Monterey Jack cheese over the potatoes, followed by the diced ham and chopped green onions.
3. Prepare the Egg Mixture
In a large bowl, whisk together the beaten eggs, evaporated milk, garlic salt, and black pepper until well blended. Pour the mixture evenly over the layered ingredients in the baking dish.
4. Bake the Casserole
For immediate baking: Place the dish uncovered in the oven and bake for about 1 hour and 15 minutes, or until the center is set and no longer jiggly.
For make-ahead preparation: Cover the dish and refrigerate overnight. When ready to bake, uncover and bake for approximately 1 hour and 30 minutes, or until fully cooked through.
5. Rest and Serve
Remove the casserole from the oven and allow it to rest for a few minutes before slicing and serving.
