Classic Southern Potato Salad
Ingredients :
To make it I used:
5 large potatoes.
1 sliced white onion.
2 cups of cooked bacon.
2 tablespoons of mayonnaise.
2 cups of cheddar cheese.
1 cup sour cream.
1 teaspoon salt.
1 teaspoon pepper.
Instructions :
Cook the Potatoes
Peel (optional) and cut the potatoes into bite-sized chunks.
Place them in a pot of lightly salted water and boil over medium-low heat for about 20 minutes, or until tender but not falling apart.
Drain well and let them cool slightly.
Make the Dressing
In a large mixing bowl, combine the sour cream, mayonnaise, sliced white onion, and cheddar cheese.
Stir until the mixture is smooth and all ingredients are fully incorporated.
Combine the Salad
Gently fold the warm potatoes into the dressing, making sure every piece is evenly coated without breaking them apart.
Add the Toppings
Sprinkle additional grated cheddar cheese and plenty of cooked, crumbled bacon over the mixture.
Fold lightly to distribute, or leave on top for presentation.
Season to Taste
Add salt, pepper, or any of your preferred spices (paprika, garlic powder, or onion powder work beautifully).
Adjust the flavors to your liking.
Serve and Enjoy
Serve warm, at room temperature, or chilled — this potato salad tastes delicious any way.
