Cherry Shortbread Cookies

Ingredients

1 cup butter, unsalted, at room temperature

½ tsp salt

2 cups flour

½ cup Confectioners Sugar

1 tbsp Vanilla Extract

¾ cup Maraschino Cherries, chopped (you could use red and green to the same amount)

⅔ cup Chocolate Chips

Instructions

Chop and then dry the chopped cherries with a paper towel

In a large mixing bowl, blend together the softened butter, the vanilla extract and ½ cup Confectioners Sugar

Mix in the flour and the salt

Fold in the cherries and the chocolate chips

Form the dough into a log shape and cover with plastic wrap

Chill the dough for 2 hours

Preheat the oven to 325*

Cover a baking tray with parchment paper

Unwrap the dough and slice into ¼ inch slices

Place on the baking tray and bake for 18 to 20 minutes, until lightly golden brown

Allow to cool before serving
