Butter Bean Stew

Ingredients:

2 cans of butter beans

One onion chopped

4-5 garlic cloves diced

A handful of mushrooms sliced

1 Tblsp of tomato paste

A handful of spinach

1/2 -1 cup of coconut milk or heavy cream

Bay leaf

Spices : garlic powder , smoked paprika , cumin, curry powder, turmeric, salt and pepper all to taste
I added chili flakes bc I eat spicy – leave them out if it’s not your cup of tea

Instructions:

sauté onions until translucent, add the mushrooms .

Sauté a few min then add the garlic and cook for 30 sec ,

add the tomato paste cook a little then add the beans with the water.

Add the spices as you go to your hearts desire .

Add the bay leaf and simmer until the beans are soft !

Add the coconut milk , cook a little, taste to see if more spices are needed then add spinach let it wilt .

Serve topped with more cream .

I used chili crisp , red onion and parsley !
