Instructions:
In a bowl, whisk together the lime juice, garlic, cilantro, 1 tablespoon of oil, dale’s Seasoning, oregano, pepper flakes, cumin, and coriander.

Remove the meat and shrimp from the bag and pat dry.
Preheat the grill to high, and preheat the oven to 325 degrees.
Wrap the tortillas in foil and place them in the oven for 15 minutes to warm and soften.
Remove from the oven and keep warm in the aluminum foil.
Continue to cook the steak over the grill to the preferred temperature, 3 to 4 minutes per side for medium-rare.
Remove from the heat and let rest for 10 minutes before slicing.
Cook chicken over the grill until internal temperature reads 165 degrees.
Once beef and chicken are fully cooked, place shrimp on grill and cook for approximately 5 minutes or until done.
In a large skillet, heat the remaining oil over medium-high heat.
Add the peppers and onions, and cook, stirring, until soft and slightly caramelized, 12-15 minutes.
Add the garlic, remaining teaspoon of salt, and 1/2 teaspoon pepper and cook, stirring, until the garlic is fragrant and soft, 1-2 minutes. Remove from the heat.
Finally, thinly slice the steak against the grain and slice chicken into 2-inch pieces.
Divide steak, chicken, and shrimp among the warmed tortillas and top with the vegetables.
Squeeze with lime juice and serve immediately.

Frequently Asked Questions:
Can I marinate the meat and seafood for a shorter time than 12 hours?
While marinating for the recommended time enhances the flavor, you can marinate for a shorter time, such as 2-4 hours, if needed.
The longer marinating time allows the flavors to penetrate the meat and seafood more deeply.
Can I use different types of bell peppers in this recipe?
Yes, you can use different colors of bell peppers, such as red, green, and yellow, to add more visual appeal to your fajitas.
The different colors will also provide a variety of flavors and nutritional benefits.
Can I use corn tortillas instead of flour tortillas?
Absolutely! If you prefer corn tortillas or want a gluten-free option, you can substitute them for the flour tortillas. Corn tortillas can add a distinct flavor and texture to your fajitas.
What is Dale’s Seasoning, and can I substitute it with another seasoning?
Dale’s Seasoning is a popular marinade and sauce that adds a savory and tangy flavor to the meat. If you don’t have Dale’s Seasoning, you can create a similar flavor profile by combining soy sauce, Worcestershire sauce, garlic, and other desired seasonings.
Can I customize the vegetable toppings in the fajitas?
Absolutely! Feel free to add or substitute vegetables based on your preference. You can include additional vegetables such as mushrooms, sliced zucchini, or even grilled corn to enhance the flavors and textures of your fajitas.
Can I use pre-marinated meat and seafood instead of marinating them myself?
Yes, if you prefer convenience, you can use pre-marinated meat and seafood for the fajitas. Just make sure the flavors complement the other ingredients in the recipe.
Can I cook the fajitas on a stovetop instead of a grill?
Absolutely! If you don’t have access to a grill, you can cook the steak, chicken, and shrimp on a stovetop using a skillet or grill pan.
Adjust the cooking times and temperatures accordingly.
Can I make the fajitas ahead of time and reheat them later?
While the fajitas are best enjoyed immediately after cooking, you can prepare the ingredients in advance and assemble them when you’re ready to serve.
However, reheating the fully assembled fajitas may result in overcooking the meat and seafood.
Are there any alternative seasonings I can use instead of dale’s Seasoning?
If you don’t have dale’s Seasoning on hand, you can create a similar flavor profile by combining soy sauce, Worcestershire sauce, garlic powder, and other desired seasonings. Adjust the quantities based on your taste preferences.
Can I substitute flour tortillas with corn tortillas or lettuce wraps?
Absolutely! If you prefer corn tortillas or want a lighter option, you can use corn tortillas or lettuce wraps instead of flour tortillas. Corn tortillas add a unique flavor, while lettuce wraps provide a low-carb alternative.
